Quick, Healing & Wholesome Lentil Soup
Amruta Goods unpolished Red Masoor Malka cooks quickly without pre-soaking and breaks down into a silky, comforting soup packed with 18g of plant-based protein per serving.
Ingredients
- 1 cup Amruta Goods Masoor Malka (Red Lentils)
- 4 cups Vegetable broth or water
- 1 tbsp Olive oil or Desi Ghee
- 1 small Onion (diced) & 3 cloves Garlic (minced)
- 1 tsp Cumin seeds & 1/2 tsp Ground Coriander
- 1/2 tsp Turmeric & 1/4 tsp Black Pepper
- 1 medium Carrot (diced)
- Juice of 1/2 Fresh Lemon
- Fresh cilantro or parsley for garnish
Instructions
- Saute Aromatics: Heat oil or ghee in a soup pot. Add cumin seeds, garlic, onion, and diced carrots. Cook for 3-4 minutes until softened.
- Add Spices & Lentils: Add rinsed red masoor dal, turmeric, coriander, black pepper, and salt. Stir well.
- Simmer: Pour in broth/water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until lentils are completely tender.
- Blend or Mash: Use an immersion blender to lightly puree half the soup for a velvety smooth yet textured consistency.
- Finish: Squeeze fresh lemon juice, adjust salt, and top with fresh herbs and cracked black pepper. Serve with toasted artisan bread.
